Ingredients
- Rotisserie Chicken (from Costco)
- Pitas (from Costco baked section)
- Hummus (from Costco?)
- Crema or Tzatziki (there's a cilantro+lime crema from Costco that's pretty good)
- spring mix lettuce (you choose)
Instructions
Warm the pitas in the oven at 350, top rack
Dice a red onion
Break down your chicken
Half the pitas into semicircles. Slather the inside with hummus, then sauce (one each side?). Stuff with chicken, veggies of your choice (peppers?), and then the spring mix. Serve.
The cilantro crema sauce can be enhanced with the diced red onion. Olives can be a nice addition. Diced tomatoes or quartered cherry tomatoes for extra Mediterranean flavor.
